Tóm tắt

Nghiên cứu được thực hiện nhằm đánh giá ảnh hưởng của việc bổ sung nấm men và hỗn hợp enzyme trong quá trình lên men kỵ khí đến chất lượng cà phê chè đặc sản Sơn La. Thí nghiệm bố trí theo khối ngẫu nhiên hoàn chỉnh gồm 5 công thức, 3 lần lặp (10 kg/lần). Các nghiệm thức gồm lên men tự nhiên (đối chứng), bổ sung nấm men Saccharomyces cerevisiae (5 hoặc 10 g/kg quả) và kết hợp enzyme pectinase–cellulase (1:1, 0,05 g/kg quả) với nấm men ở hai mức tương ứng. Kết quả cho thấy việc bổ sung nấm men và enzyme làm thay đổi đáng kể thành phần hóa học của cà phê sau lên men. Hàm lượng protein dao động 15,60–19,07% SKK, lipid 10,19–11,48% SKK, trong khi carbohydrate giảm từ 52,74% ở đối chứng xuống 32,37–38,52% ở các công thức xử lý. Hàm lượng polyphenol tổng số và flavonoid tổng số đạt cao nhất ở công thức AAN-S4 với giá trị tương ứng 73,35 mg GAE/g CC và 31,41 mg QE/g CC. Axit chlorogenic đạt cao nhất ở công thức AAN-S1 (0,8225%), trong khi hàm lượng caffeine giảm còn 0,88–1,17% SKK so với đối chứng (1,56% SKK). Kết quả thử nếm cho thấy tất cả các mẫu đều đạt tiêu chuẩn cà phê đặc sản (>80 điểm SCA), trong đó công thức AAN-S1 đạt điểm cảm quan cao nhất (84,42 điểm). Nghiên cứu khẳng định việc bổ sung nấm men và enzyme trong lên men kỵ khí có khả năng cải thiện chất lượng hóa học và cảm quan của cà phê chè đặc sản, trong đó công thức AAN-S1 bổ sung nấm men 5 g/kg quả cho hiệu quả tổng thể tốt nhất.
